Cottage Cheese Beef Sweet Potato Bowl

Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1/2-inch cubes
  • 2 tbsp. Schnucks olive oil, divided
  • 1 lb. Schnucks 90%-lean ground beef
  • 1 tbsp. Schnucks tomato paste
  • 1 tbsp. Schnucks 30%-less-sodium taco-seasoning mix
  • 2 cups Schnucks low-fat cottage cheese
  • 1 large avocado, diced
  • 4 tbsp. Culinaria spicy raw honey

Instructions

  1. Preheat oven to 425 degrees. On a sheet pan, toss sweet potatoes with 1 tablespoon oil and, if desired, season with salt and pepper. Bake 25–30 minutes, then remove from oven and let cool slightly, 5–10 minutes.
  2. Meanwhile, in a medium skillet, heat remaining oil over medium. Add ground beef; cook, breaking up lumps, until browned, 7–10 minutes. Stir in tomato paste and taco seasoning; cook 2 minutes more.
  3. Divide sweet potatoes and ground beef mixtures among 4 bowls. Add cottage cheese and avocado, then drizzle with hot honey. Garnish with pepper, if desired, and serve immediately.

Chef tip: Change up the recipe to suit your budget and preferences:

  • Give it a plant-based twist by swapping the ground beef for cooked lentils, cottage cheese for plant-based plain yogurt, sweet potato for butternut squash and hot honey for lemon juice.
  • Give it a Mediterranean makeover by swapping the beef for tomatoes and olives, taco seasoning for Italian, sweet potatoes for couscous, cottage cheese for feta, avocado for cucumber and hot honey for lemon juice.
