Cottage Cheese Beef Sweet Potato Bowl

Ingredients
- 4 medium sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 tbsp. Schnucks olive oil, divided
- 1 lb. Schnucks 90%-lean ground beef
- 1 tbsp. Schnucks tomato paste
- 1 tbsp. Schnucks 30%-less-sodium taco-seasoning mix
- 2 cups Schnucks low-fat cottage cheese
- 1 large avocado, diced
- 4 tbsp. Culinaria spicy raw honey
Instructions
- Preheat oven to 425 degrees. On a sheet pan, toss sweet potatoes with 1 tablespoon oil and, if desired, season with salt and pepper. Bake 25–30 minutes, then remove from oven and let cool slightly, 5–10 minutes.
- Meanwhile, in a medium skillet, heat remaining oil over medium. Add ground beef; cook, breaking up lumps, until browned, 7–10 minutes. Stir in tomato paste and taco seasoning; cook 2 minutes more.
- Divide sweet potatoes and ground beef mixtures among 4 bowls. Add cottage cheese and avocado, then drizzle with hot honey. Garnish with pepper, if desired, and serve immediately.
