Cornbread Taco Casserole

Ingredients

  • 1 (8.5 oz.) box corn muffin mix
  • 1 (15.25 oz.) can Schnucks whole-kernel corn, drained
  • 1 (15.25 oz.) can Schnucks no-salt-added black beans, drained
  • 1/2 cup Schnucks nonfat plain Greek yogurt, plus more for garnish
  • 1 (4 oz.) can Schnucks diced green chiles
  • 1/4 cup Schnucks reduced-fat Mexican-style four cheese finely shredded cheese
  • 1 large Schnucks egg
  • 1 tsp. Schnucks 30%-less-sodium taco seasoning
  • 2 tbsp. fresh cilantro, for garnish

Instructions

  1. Preheat oven to 375 degrees. Lightly coat an 8x8-inch baking dish with cooking spray.
  2. In a large bowl, stir together all ingredients until well combined, then pour into prepared baking dish. Bake until golden brown, 25-30 minutes. Let rest 5 minutes before serving topped with Greek yogurt and fresh cilantro.
