Cobb Salad

Ingredients
- 2 (14 oz.) cans chickpeas, drained & rinsed
- 1 tbsp. Schnucks olive oil
- 1/2 tsp. smoked paprika
- 1/4 tsp. salt
- 8 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 4 hard-boiled eggs, peeled & quartered
- 1 cup Schnucks frozen whole kernel corn, thawed
- 1 cup crumbled blue cheese
- 1 large avocado, diced
- 1/2 red onion, thinly sliced
Instructions
- Preheat oven to 425 degrees. Prepare a baking sheet pan with tinfoil. In a medium bowl, add chickpeas, olive oil, paprika and salt. Mix until well combined. Spread on sheet pan in a single layer and bake 10–15 minutes or until crispy. Remove from oven and set aside.
- On a platter, arrange lettuce. Top with crispy chickpeas, tomatoes, quartered hard-boiled eggs, corn, blue cheese, diced avocado and sliced red onion.
- Serve immediately with honey mustard vinaigrette.
