Cobb Salad

Cobb Salad

Ingredients

  • 2 (14 oz.) cans chickpeas, drained & rinsed
  • 1 tbsp. Schnucks olive oil
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. salt
  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 4 hard-boiled eggs, peeled & quartered
  • 1 cup Schnucks frozen whole kernel corn, thawed
  • 1 cup crumbled blue cheese
  • 1 large avocado, diced
  • 1/2 red onion, thinly sliced

Instructions

  1. Preheat oven to 425 degrees. Prepare a baking sheet pan with tinfoil. In a medium bowl, add chickpeas, olive oil, paprika and salt. Mix until well combined. Spread on sheet pan in a single layer and bake 10–15 minutes or until crispy. Remove from oven and set aside.
  2. On a platter, arrange lettuce. Top with crispy chickpeas, tomatoes, quartered hard-boiled eggs, corn, blue cheese, diced avocado and sliced red onion.
  3. Serve immediately with honey mustard vinaigrette.
