Citrus, Couscous and Roasted Fennel With Halloumi

A Mediterranean-inspired dish that balances tender roasted fennel and warm couscous with bright mandarin oranges and savory fried Halloumi cheese.

Citrus, Couscous and Roasted Fennel With Halloumi

Ingredients

  • 1 small fennel bulb (about 6 oz.), cut into 1/2-inch wedges
  • 4 tbsp. Schnucks olive oil, divided
  • 1 cup Schnucks vegetable stock
  • 1 cup store-bought, uncooked roasted garlic-olive oil couscous mix
  • 1/2 lemon, juiced
  • 3 cups Schnucks mandarin oranges in fruit juice, juice drained and reserved
  • 1/2 tbsp. ground coriander
  • 2 (8.8 oz.) pkg. Halloumi cheese, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp. Schnucks sliced almonds

Instructions

  1. Preheat oven to 400 degrees. Line a sheet pan with foil, add fennel and drizzle with 1 tablespoon oil. Roast until tender, 20–25 minutes.
  2. Meanwhile, in a small saucepan over high heat, bring stock to a boil. Stir in couscous, cover and let rest 5 minutes. Fluff with a fork.
  3. In a small bowl, whisk together lemon juice, 2 tablespoons reserved mandarin juice, 2 tablespoons oil and the coriander. Season with salt and pepper, if desired.
  4. In a skillet over medium heat, add remaining oil. Cook halloumi slices until golden, 1–2 minutes per side.
  5. In a large bowl, toss together fennel, couscous, oranges, parsley and almonds. Add dressing and gently toss to coat. Serve topped with warm halloumi.

Chef Tip: Swap the halloumi for another protein like chickpeas, white beans or even grilled chicken. This keeps the dish satisfying and protein-packed while lowering cost and still complementing the citrusy couscous and roasted fennel.
