CHIPS AHOY! Easy Monster Ice Cream Sandwiches

Celebrate Halloween with these easy no bake ice cream sandwiches that you can make ahead. Kids will help love helping with the monster eyes on this fun dessert!

CHIPS AHOY! Easy Monster Ice Cream Sandwiches

Ingredients

  • 12 CHIPS AHOY! Cookies
  • 2 tbsp. orange decorating icing
  • 2 tbsp. purple decorating icing
  • 36 mini candy button eyes (about 1-1/2 tsp.)
  • 3/4 cup vanilla ice cream, softened

Instructions

  1. Place 6 cookies, top sides up, in single layer on parchment-covered baking sheet. Drizzle with icings, then top each cookie with about 6 eyes.
  2. Refrigerate 5 minutes or until icings are firm.
  3. Meanwhile, place remaining cookies, top sides down, on another baking sheet. Top each cookie with 2 tablespoons of ice cream.
  4. Cover ice cream-topped cookies with decorated cookies, flat sides down, to make 6 ice cream sandwiches, gently pressing top cookies into ice cream to secure.
  5. Freeze 2 hours or until firm.

Make Ahead

For longer storage, freeze these fun ice cream sandwiches as directed, then wrap them individually in plastic wrap before placing them in a freezer-weight resealable plastic bag. Freeze up to 1 month before serving.
