Chicken Wraps With Hummus, Goat Cheese and Chimichurri

A fresh, no-cook meal that uses rotisserie chicken, creamy goat cheese and a vibrant chimichurri sauce rolled up in a soft flour tortilla.

Chicken Wraps With Hummus, Goat Cheese and Chimichurri

Ingredients

  • 1/2 cup Schnucks classic hummus
  • 4 Schnucks 70-calorie flour tortillas
  • 2 cups shredded Schnucks rotisserie chicken
  • 1/3 cup crumbled goat cheese
  • 1 cup baby spinach
  • 1/2 small red onion, sliced
  • 1 cucumber, diced
  • 1/4 cup chimichurri

Instructions

  1. Spread 2 tablespoons hummus on each tortilla. Top with chicken, goat cheese, spinach, red onion and cucumber. Drizzle with chimichurri. Fold in sides, roll tightly and cut in half to serve.

Chef Tip: Make your own homemade chimichurri! Blend together 1 cup fresh parsley, 2 tbsp. fresh oregano (or 2 teaspoon dried), 4 garlic cloves, 1/2 teaspoon crushed red pepper and 1/4 cup red wine vinegar until smooth. Then slowly add 1/2 cup olive oil. Season with salt and refrigerate in an airtight container for at least 10 minutes, up to 1 week.
