Chicken, Tomato and Artichoke Kabobs
Skewer up these satisfying kabobs with marinated chicken, juicy tomatoes and tender artichoke hearts, creating a flavorful and easy-to-grill meal.

Ingredients
- 1 cup garlic-herb marinade, divided (see recipe link in notes)
- 1 1/2 lb. Schnucks boneless, skinless chicken breasts, cut into 11/2-inch cubes
- 1 pint cherry tomatoes
- 1 (14 oz.) can artichoke hearts, drained
- 6 bamboo skewers, soaked in water at least 30 minutes
- 3 tbsp. chopped fresh Italian flat-leaf parsley, for garnish
- 1 lemon, cut into wedges, for garnish
Instructions
- In a medium bowl, stir together 3/4 cup marinade with chicken, cherry tomatoes and artichokes. Refrigerate, covered, twenty minutes.
- Remove chicken and vegetables from marinade and discard excess liquid. Alternately thread chicken, tomato and artichoke onto prepared skewers until full. Season with salt and pepper, if desired.
- Preheat an outdoor grill to medium-high and oil grate. Grill skewers, basting with remaining marinade, until chicken’s internal temperature reaches 165 degrees, 4–6 minutes per side.
- Transfer skewers to a platter and serve immediately, garnished with parsley and squeeze of lemon.
