Chicken Stuffed Bell Pepper Boats

Ingredients
- 1 tbsp. Schnucks extra virgin olive oil
- 16 oz. Perdue ground chicken
- 4 green bell peppers
- 1 (8 oz.) pkg. Dole spinach
- 1 cup Schnucks instant brown rice, cooked
- 2 cups Full Circle roasted garlic pasta sauce
- 2/3 cup Schnucks part skim mozzarella cheese
Instructions
- Preheat oven to 375 degrees.
- Cook instant brown rice according to package directions to yield 1 cup cooked rice and set aside.
- Heat oil in a large skillet then brown ground chicken until cooked through. Add spinach and cook, covered, until wilted, 2-3 minutes.
- Add pasta sauce and rice to chicken mixture and stir until combined.
- Cut peppers lengthwise. Spoon out ribs and seeds and place on a large sheet pan.
- Fill pepper halves with chicken mixture and bake, covered with foil, for 15 minutes.
- Remove foil and top each pepper with cheese, about 1 tbsp each. Bake, uncovered, for an additional 3 minutes or until cheese is melted. Serve warm.
