Cherry Red Caprese Salad
This simple Cherry Red Caprese Salad is the perfect summer side to bring to your next picnic or backyard BBQ. It’s sweet, delicious and loaded with healthy ingredients.

Ingredients
- 2 tbsp. balsamic vinegar
- 1 tsp. Dijon mustard
- 1/4 cup Schnucks olive oil
- 20 oz. multicolor cherry tomatoes, halved
- 1 (8 oz.) pkg. mozzarella pearls
- 1/4 cup fresh basil, chopped
- salt to taste
- pepper to taste
Instructions
- In a large mixing bowl, whisk together the vinegar, mustard and oil. Add the tomatoes and mozzarella; toss to coat. Let marinate for 30 minutes, tossing occasionally.
- Place the tomatoes in a large serving bowl. Top with fresh basil.
