Cauliflower Fried Rice

Cauliflower Fried Rice

Ingredients

  • 4 tbsp. Schnucks canola oil
  • 4 pkgs. frozen riced cauliflower medley
  • 2 (0.75 oz.) pkgs. stir fry seasoning mix
  • 4 tbsp. Schnucks less sodium soy sauce
  • 4 Schnucks large eggs, lightly beaten

Instructions

  1. In a large skillet, heat oil over medium-high. Add cauliflower medley and seasoning mix; stir-fry until vegetables are tender and lightly browned, 5–7 minutes. Stir in soy sauce until combined, then push mixture to side of skillet.
  2. Pour eggs into skillet’s center; cook, stirring to scramble, 1–2 minutes. Stir together with vegetables. Season with salt and pepper, if desired. Serve hot.

Chef Tip:

No stir-fry seasoning? Make your own by combining 4 tsp. cornstarch, 4 tsp. garlic powder, 4 tsp. onion powder, 2 tsp. ginger powder, 2 tsp. sugar, 1 tsp. black pepper and 4 tsp. soy sauce.
