Cauliflower Fried Rice
A delicious and healthier alternative to traditional fried rice, this dish features cauliflower and a medley of colorful vegetables. With tender eggs for protein and classic stir-fry seasoning, it’s flavorful and filling.

Ingredients
- 4 tbsp. Schnucks canola oil
- 4 pkgs. frozen riced cauliflower medley
- 2 (0.75 oz.) pkgs. stir fry seasoning mix
- 4 tbsp. Schnucks less sodium soy sauce
- 4 Schnucks large eggs, lightly beaten
Instructions
- In a large skillet, heat oil over medium-high. Add cauliflower medley and seasoning mix; stir-fry until vegetables are tender and lightly browned, 5–7 minutes. Stir in soy sauce until combined, then push mixture to side of skillet.
- Pour eggs into skillet’s center; cook, stirring to scramble, 1–2 minutes. Stir together with vegetables. Season with salt and pepper, if desired. Serve hot.
Chef Tip:
No stir-fry seasoning? Make your own by combining 4 tsp. cornstarch, 4 tsp. garlic powder, 4 tsp. onion powder, 2 tsp. ginger powder, 2 tsp. sugar, 1 tsp. black pepper and 4 tsp. soy sauce.
