Braised Rotisserie Chicken with Spinach and Tomato


  • 1 tbsp. olive oil
  • 1 yellow pepper
  • 1 onion
  • 1 can (14.5 oz.) Schnucks diced tomatoes
  • 1 cup chicken stock
  • 1 tsp. rosemary
  • 1/2 tsp. crushed red pepper flakes
  • 2 tsp. minced garlic
  • 1 Schnucks rotisserie chicken, cut into 8 pieces
  • 3 cups baby spinach


  1. Heat oil in a large skillet over medium high heat. Add peppers and onions to pan and cook until softened, 3-4 minutes.
  2. Stir in tomatoes, stock, rosemary and red pepper flakes. Bring to a boil then add garlic and chicken. Cover, reduce heat to low and simmer 8 minutes.
  3. Add spinach and cover, cooking just until spinach is wilted, 1-2 minutes. Season with salt and pepper, if desired. Serve warm.
