Beet Grilled Cheese
A fall twist on a classic, this grilled cheese is a beautiful pairing of earthy beets and creamy goat cheese on hearty sourdough.

Ingredients
- 1 (15 oz.) can Schnucks no-salt-added sliced beets, drained
- 2 tbsp. Schnucks balsamic vinaigrette salad dressing
- 4 oz. goat cheese
- 1 tsp. Schnucks orange juice
- 8 slices Schnucks sourdough bread
- 1 cup fresh arugula
- 2 tbsp. Schnucks butter
Instructions
- In a large bowl, toss beets with dressing and let marinate 5 minutes.
- Meanwhile, in a small bowl, stir together goat cheese and orange juice until smooth; spread evenly onto 4 bread slices. Top each with beets, arugula and remaining bread slices; press gently.
- In a large skillet over medium heat, melt butter. Working in batches as needed, cook sandwiches until bread is golden brown and filling is warmed through, 2–3 minutes per side. Slice and serve warm.
