Beef and Broccoli Lo Mein

Ingredients

  • 1 tbsp. canola oil
  • 1 lb. Schnucks 90% lean ground beef
  • 1 (6.5 oz) can no-salt added mushroom stems and pieces, drained
  • 1 large sweet onion, thinly sliced
  • 2 tbsp. minced garlic
  • 1 (10 oz.) bag Schnucks Steamin' Easy freshly frozen broccoli florets, steamed
  • 1 (8 oz.) pkg. Banza pasta of choice, cooked & drained
  • 1/4 cup Schnucks less-sodium soy sauce
  • 2 tsp. ground ginger
  • 1/2 tsp. black pepper
  • 1 tsp. crushed red pepper, for garnish

Instructions

  1. In a large skillet, heat oil over medium. Cook beef, stirring to crumble, until browned, 8–10 minutes; drain. Season with salt and black pepper, if desired. Add mushrooms, onion and garlic; cook, stirring until combined, 3–5 minutes.
  2. Stir in broccoli, cooked pasta, soy sauce, ginger and black pepper; cook, covered, over medium-low heat 5 minutes. Remove from heat and garnish with red pepper. Serve immediately.
