BBQ Pork & Potato Croquettes

BBQ Pork & Potato Croquettes

Ingredients

  • 1 lb. ground pork
  • 1/2 cup barbecue sauce, plus additional for serving (optional)
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 /12 cups Panko breadcrumbs
  • 1 (12 oz.) pkg. refrigerated prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 tsp. salt
  • 1 tsp. ground black pepper
  • 2 cups vegetable oil
  • 2 tbsp. sliced green onions

Instructions

  1. Line rimmed baking pan with parchment paper; line second rimmed baking pan with paper towel.
  2. In a large skillet, cook pork over medium-high heat 8 minutes or until browned and internal temperature reaches 160 degrees F, breaking up pork with side of spoon.
  3. Stir in barbecue sauce and cook 1 minute or until heated through.
  4. Put flour, whisked eggs and breadcrumbs in 3 separate shallow dishes.
  5. In a large bowl, stir mashed potatoes, cheese, salt, pepper and pork mixture.
  6. Shape potato mixture into 1 1/2 inch balls; dredge in flour, shaking off excess.
  7. Dip potato balls in eggs and breadcrumbs to coat, and place on parchment paper-lined pan.
  8. Wipe out skillet; add oil and heat over medium heat 1 minute or until hot.
  9. In 2 batches, add potato balls and cook 4 minutes, turning to brown all sides.
  10. With slotted spoon, transfer to paper towel-lined pan. Makes about 24 croquettes
  11. Serve croquettes garnished with green onions along with barbecue sauce for dipping, if desired.
