BBQ Pork & Potato Croquettes

Ingredients
- 1 lb. ground pork
- 1/2 cup barbecue sauce, plus additional for serving (optional)
- 1 cup all-purpose flour
- 3 large eggs
- 1 /12 cups Panko breadcrumbs
- 1 (12 oz.) pkg. refrigerated prepared mashed potatoes
- 1 cup shredded cheddar cheese
- 1 tsp. salt
- 1 tsp. ground black pepper
- 2 cups vegetable oil
- 2 tbsp. sliced green onions
Instructions
- Line rimmed baking pan with parchment paper; line second rimmed baking pan with paper towel.
- In a large skillet, cook pork over medium-high heat 8 minutes or until browned and internal temperature reaches 160 degrees F, breaking up pork with side of spoon.
- Stir in barbecue sauce and cook 1 minute or until heated through.
- Put flour, whisked eggs and breadcrumbs in 3 separate shallow dishes.
- In a large bowl, stir mashed potatoes, cheese, salt, pepper and pork mixture.
- Shape potato mixture into 1 1/2 inch balls; dredge in flour, shaking off excess.
- Dip potato balls in eggs and breadcrumbs to coat, and place on parchment paper-lined pan.
- Wipe out skillet; add oil and heat over medium heat 1 minute or until hot.
- In 2 batches, add potato balls and cook 4 minutes, turning to brown all sides.
- With slotted spoon, transfer to paper towel-lined pan. Makes about 24 croquettes
- Serve croquettes garnished with green onions along with barbecue sauce for dipping, if desired.
