Avocado Baked Sweet Potatoes

This recipe is a play on classic avocado toast, but swaps the bread for sweet potatoes for added nutrients and a delicious sweet burst of flavor. Topped with avocado mash and feta, this dish is zesty and satisfying.

Avocado Baked Sweet Potatoes

Ingredients

  • 2 small sweet potatoes
  • 1 avocado, peeled & pitted
  • 1 lime, juiced (about 2 tbsp.)
  • 1/2 tsp. Schnucks garlic salt
  • 1/4 tsp. Schnucks black pepper
  • 3 tbsp. feta cheese crumbles, for garnish

Instructions

  1. Preheat oven to 400 degrees with a rack in middle position. Using a fork, prick sweet potatoes all over 3–4 times. Transfer to a sheet pan; bake until fully softened, 40–45 minutes. Remove from oven and let cool 10 minutes.
  2. In a small bowl, mash avocado with lime juice, garlic salt and pepper until desired consistency. Halve sweet potatoes lengthwise and top with avocado mixture. Garnish with feta and serve immediately.
