Apple-Ricotta Protein Waffle

Ingredients
- 1/2 cup Schnucks part-skim ricotta cheese
- 1/4 cup Schnucks unsweetened applesauce
- 1 large Schnucks egg
- 2 tbsp. Culinaria pure maple syrup
- 1/2 cup Schnucks skim milk
- 3/4 cup Schnucks flour
- 1 tbsp. baking powder
- 1/4 tsp. salt
- 2 medium apples, sliced
- 1/4 cup Schnucks nonfat plain Greek yogurt
- lemon zest, for garnish
- cinnamon, for garnish
Instructions
- In a large bowl, whisk together ricotta, applesauce, egg, maple syrup and milk until well combined.
- In a medium bowl, stir together flour, baking powder and salt. Stir into bowl with ricotta mixture until just combined.
- Preheat a waffle iron and coat with cooking spray. Working in batches as needed, pour in 1/4 cup batter. Cook until crisp and firm, 2–3 minutes. Serve immediately, topped with apple slices, yogurt, lemon zest and cinnamon.
