Air-Fried Peach and Shortbread Crumble
This warm dessert is fresh yet cozy and satisfying. Halved peaches are topped with a buttery crumble made from crushed shortbread cookies and air-fried to golden-brown perfection, then topped with cool, creamy frozen yogurt.

Ingredients
- 1 tbsp. Schnucks all-purpose flour
- 1 tbsp. Schnucks brown sugar
- 1/4 tsp. Schnucks ground cinnamon, plus additional for sprinkling (optional)
- 1/8 tsp. Schnucks ground nutmeg
- 1/2 cup coarsely crush shortbread cookies
- 2 tbsp. Schnucks unsalted butter, cut into small pieces
- 6 large peaches, halved and pitted
- 1 tbsp. Schnucks vegetable oil
- 3 cups frozen vanilla yogurt
Instructions
- Make the topping by combining flour, brown sugar, cinnamon, nutmeg, and coarsely crushed shortbread cookies in a bowl. Add the unsalted butter pieces. Using your fingers, cut the butter into the flour mixture until coarse crumbs form. Set aside.
- Gently brush the peach halves with vegetable oil.
- Preheat your air fryer to 350°F for 5 minutes. Place the peach halves, cut side down, on the air fryer basket in a single layer. You will likely need to work in 2-3 batches, depending on the size of your air fryer and peaches. Air fry for 7-9 minutes, or until they are slightly tender and show some browning on the cut side.
- Carefully flip the peach halves so they are cut-side up. Spoon about 1 tablespoon of the streusel crumb mixture into the hollow of each peach half. Return the filled peaches to the air fryer. Air fry for an additional 5-7 minutes, or until the peaches are tender and topping is golden brown and slightly crispy.
- Carefully remove the hot peaches from the air fryer. Serve immediately with scoops of frozen vanilla yogurt. If desired, sprinkle with additional cinnamon.
