Fresh From The Farm

Not all cheese is created equal. Just think about the difference between craft and commercial beer. Similar to microbreweries, farmstead cheeses are expertly crafted in small batches using milk that never left the farm. This is real cheese made by real people, and it only takes one bite to taste their passion and hard work. Read on to learn about four local farms that are taking cheese to the next level — made by your neighbors, brought to you by Schnucks.

Tulip Tree Creamery

Tulip Tree Creamery is located on the northwest side of Indianapolis, IN and was founded in 2014 by Fons Smits and Laura Davenport with the help of other helpful advisors. Fons, originally from the Netherlands, has traveled all over the world consulting with and developing dairy plants – focusing on small to medium scale facilities. All products are made by hand and are being distributed across the US with heavier distribution in the mid-west, east and west coast.

Marcoot Jersey Creamery

After seven generations of raising Jersey cattle, the Marcoot family knows a thing or two about dairy. All cheese from Marcoot Jersey Creamery is made solely from the milk of their hormone-free, registered Jersey cattle that are pasture-raised and primarily grass-fed. This cheese is then aged in their underground cave, which provides natural aging and energy efficiency. Sustainability is key to the Marcoots and guides the methods in which they care for their herd and produce their premium cheese.

Green Dirt Farm

All cheese from Green Dirt Farm starts with exceptional milk produced by lovingly raised sheep. This is made possible through careful consideration and rigorous attention every step of the way — beginning with the dirt. Healthy soil creates yummy and nutritious grass that feeds happy animals and produces high-quality milk that is more flavorful and healthier than conventional products. Green Dirt Farm is Animal Welfare Approved for raising its sheep humanely outdoors on pasture. The rich flavors of this milk make it perfect for crafting wonderful and complex cheeses. As the landscape changes with the seasons, so does the milk. Green Dirt’s cheese-makers fine-tune their craft to highlight and celebrate the unique flavors from these variations.

Baetje Farms

Baetje Farms (pronounced “beige-e”) believes that the best cheese comes from animals that are in the best physical condition, which is why their goats receive exceptional care. They are given everything they need to lead happy and healthy lives, from unlimited filtered spring water and organic herbal teas to organic mineral supplements and custom antibiotic-free whole grain feed. Baetje Farms’ goats are also hormone-free and given freedom to do whatever they choose, whether it is skipping up a hill or soaking up some sunshine. Their facility is built to produce small quantities of cheese, meaning their animals are allowed to keep with their natural clock. Coupled with state-of-the-art aging facilities that produce exacting temperature and humidity conditions, every aspect has been considered to craft the most delicious cheese possible.
