Tomato Bacon Egg Skillet

Ingredients
- 8 Schnucks large eggs
- 1/4 cup low-fat milk
- 1/4 cup Schnucks shredded parmesan
- 1 tsp. dried basil
- 1 tsp. Schnucks olive oil
- 1/4 yellow onion, diced
- 6 slices Schnucks bacon, diced
- 3 Roma tomatoes, sliced
- fresh basil to garnish (optional)
Instructions
- Preheat oven to 350 degrees. In a medium bowl, whisk eggs to combine. Add milk, cheese and basil, whisk 1–2 minutes until well combined and frothy. Season with salt and pepper, if desired, and set aside.
- In a large oven-safe skillet, heat oil over medium-high. Sauté onion and bacon until caramelized, about 3–5 minutes. Add egg mixture and arrange tomato slices on top of egg in a single layer.
- Remove from heat and transfer to oven. Bake 20–25 minutes on middle rack, until edges are golden brown and middle is set. Remove from oven and rest 5 minutes. Serve immediately.
