Sweet Southern Barbecue Chicken
Coca-Cola is the secret ingredient in this dish for just the right amount of sweetness.

Ingredients
- 3 tbsp. canola oil, divided
- 1/2 cup white onion, chopped
- 1/2 cup brown sugar, packed
- 1 tsp. dry mustard
- 1 tsp. honey mustard
- 1 tsp. Dijon mustard
- 1 cup Coca-Cola
- 2 tbsp. balsamic vinegar
- 2 tbsp. apple cider vinegar
- 2 tbsp. Worcestershire sauce
- 1/2 cup ketchup
- 2 lbs. boneless skinless chicken thighs
Instructions
- To make sauce, heat 1 tablespoon oil in a medium skillet over medium heat. Add onion and garlic and cook 2 minutes or until slightly softened. Stir in brown sugar, dry mustard, honey mustard and Dijon mustard. Bring to a boil over medium-high heat, reduce heat and simmer, uncovered, 20 minutes or until thickened.
- Add Coca-Cola, balsamic vinegar, cider vinegar, Worcestershire sauce and ketchup; stir to combine. Simmer 15 to 20 minutes or until thickened. Remove from heat and set aside.
- Heat remaining oil in large skillet over medium-high heat. Add half of chicken and cook 5 to 7 minutes, flip; cook an additional 5 to 7 minutes or until cooked through (165 degrees), brush with sauce. Brush sides again with sauce during the last 2 minutes of cooking. Repeat with remaining chicken. Serve chicken with additional sauce.
