Sweet Southern Barbecue Chicken

Coca-Cola is the secret ingredient in this dish for just the right amount of sweetness.

Sweet Southern Barbecue Chicken

Ingredients

  • 3 tbsp. canola oil, divided
  • 1/2 cup white onion, chopped
  • 1/2 cup brown sugar, packed
  • 1 tsp. dry mustard
  • 1 tsp. honey mustard
  • 1 tsp. Dijon mustard
  • 1 cup Coca-Cola
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. Worcestershire sauce
  • 1/2 cup ketchup
  • 2 lbs. boneless skinless chicken thighs

Instructions

  1. To make sauce, heat 1 tablespoon oil in a medium skillet over medium heat. Add onion and garlic and cook 2 minutes or until slightly softened. Stir in brown sugar, dry mustard, honey mustard and Dijon mustard. Bring to a boil over medium-high heat, reduce heat and simmer, uncovered, 20 minutes or until thickened.
  2. Add Coca-Cola, balsamic vinegar, cider vinegar, Worcestershire sauce and ketchup; stir to combine. Simmer 15 to 20 minutes or until thickened. Remove from heat and set aside.
  3. Heat remaining oil in large skillet over medium-high heat. Add half of chicken and cook 5 to 7 minutes, flip; cook an additional 5 to 7 minutes or until cooked through (165 degrees), brush with sauce. Brush sides again with sauce during the last 2 minutes of cooking. Repeat with remaining chicken. Serve chicken with additional sauce.
