Sweet and Sour Pork Bowl
This satisfying Asian-inspired dish features tender pieces of pork tossed in a sweet and tangy sauce served over rice, for a quick and flavorful meal. Add bell pepper, tomatoes, and onion for crisp, fresh flavor.

Ingredients
- 1 1/2 pork tenderloin, cut into 1/2 inch cubes
- 1/4 cup whole wheat flour
- 1/4 cup 100% apple juice
- 2 tbsp. Schnucks lemon juice
- 2 tbsp. Schnucks less-sodium soy sauce
- 1 tbsp. tomato paste
- 2 tbsp. vegetable oil, divided
- 1 yellow bell pepper, diced
- 1 medium red onion, diced
- 3 Roma tomatoes, quartered & sliced
- 2 tbsp. minced garlic
- 2 cups cooked long-grain brown rice
- 2 tbsp. sliced green onion
Instructions
- To a gallon-size resealable bag, add pork and flour. Season with salt and black pepper, if desired. Seal bag and shake to coat.
- In a medium bowl, whisk together apple juice, lemon juice, tomato paste and soy sauce until combined. Cover and set aside.
- Heat 1 tablespoon oil in a large skillet over medium-high until hot and shimmering. Stir in bell pepper, red onion and tomatoes; cook until barely softened, about 1 minute. Stir in garlic until fragrant, about 30 seconds. Transfer to a plate.
- Remove pork from bag, discarding excess flour, and transfer to skillet along with remaining oil. With heat still on medium-high, cook until browned all over, about 6 minutes. Stir in sauce and increase heat to high; cook, stirring often, until sauce is thickened, about 2–3 minutes. Stir in vegetables; cook 3–4 minutes more.
- Serve immediately over cooked brown rice, garnished with green onion.
