Spicy Shrimp Street Tacos
These Spicy Shrimp Street Tacos are an excellent weeknight dinner. They come together quickly and combine succulent shrimp with chipotle seasoning and fresh mango salsa for a nutritious, flavorful meal.

Ingredients
- 2 lbs. raw shrimp (31–40 count), peeled and deveined
- 2 tbsp. Southwest Chipotle seasoning blend
- 2 tbsp. Schnucks vegetable oil
- 1 avocado, diced
- 1 1/4 cups Schnucks mango salsa
- 16 street-taco white-corn tortillas, warmed
- 2 cups Schnucks shredded lettuce
Instructions
- Preheat oven to 450 degrees with a rack in middle position. Line a sheet pan with foil and coat with cooking spray.
- In a large bowl, add shrimp, chipotle seasoning and oil; toss to coat. Refrigerate, covered, 30 minutes.
- In a medium bowl, stir together avocado and mango salsa.
- Arrange shrimp in a single layer on prepared sheet pan. Season with salt and pepper, if desired. Roast until shrimp is pink, about 6 minutes.
- Set oven to broil on high. Broil shrimp until lightly charred, 2–3 minutes. Serve immediately with tortillas, avocado mixture and lettuce.
