Spicy Peanut Shrimp Ramen

This dish is an explosion of savory goodness. Packed with juicy shrimp, tender ramen noodles and a spicy peanut marinade, this soup is simply irresistible.

Spicy Peanut Shrimp Ramen

Ingredients

  • 1 lb. Schnucks raw shrimp, peeled & deveined
  • 2 tbsp. Schnucks creamy peanut butter
  • 2 garlic cloves, sliced
  • 1 tbsp. less sodium soy sauce
  • 2 tsp. honey
  • 1/2 tsp. minced ginger
  • 1/2 tsp. red chili flakes
  • 1 tbsp. Schnucks vegetable oil
  • 3 cups low sodium vegetable broth
  • 2 (3 oz.) pkgs ramen noodles (seasoning packets removed)
  • 1/2 cup snow peas
  • 1/2 cup carrot matchsticks
  • 1/2 (13.5 oz.) can unsweetened coconut milk
  • 2 green onions, sliced (optional)
  • 2 limes, quartered (optional)

Instructions

  1. In a gallon Ziploc bag, add shrimp, peanut butter, garlic, soy sauce, honey, ginger and red chili flakes. Seal bag tightly and shake to mix marinade with shrimp. Refrigerate for at least 30 minutes, up to 4 hours.
  2. In a medium pot, heat oil over medium-high heat. Add shrimp with marinade to pot and cook for 5 minutes or until shrimp is pink. Remove shrimp to a plate and cover with foil to keep warm.
  3. Add broth to the pot and bring to a boil, scraping bottom to loosen browned marinade bits. Add noodles, snow peas and carrots. Boil for 3 minutes, then reduce heat to low.
  4. Add coconut milk, shrimp and green onions. Stir to combine when shrimp is heated through, 2–5 minutes. Serve hot with lime quarters and garnished with peanuts (if desired).
