  • 2 ears of corn, husked
  • 1 large tomato, diced
  • 1 jalapeño, diced
  • 1/4 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • juice of 1 lime


  1. Using a kitchen knife, carefully cut kernels from ears of corn.
  2. Add all ingredients to a large bowl and stir to combine.
  3. Store in an air-tight container and refrigerate until ready to serve.
