Skillet-Fried Porterhouse with Bourbon-Chipotle Butter

Ingredients
- 2 tsp. freshly ground black pepper
- 2 tsp. paprika
- 1 tsp. salt
- 1 tsp. Schnucks dried oregano leaves
- 1/4 tsp. Schnucks ground cayenne pepper
- 1 Certified Angus Beef® porterhouse steak (1" thick)
- 2 tbsp. Schnucks olive oil
- fresh oregano sprigs for garnish (optional)
- 2 tbsp. Bourbon-Chipotle Butter (see recipe notes)
Instructions
- First, prepare Bourbon-Chipotle Butter (see recipe notes).
- Next, in small bowl, combine black pepper, paprika, salt, oregano and cayenne. Sprinkle both sides of steak with seasoning mixture; coat steak with oil and let stand 30 minutes.
- Heat medium cast iron skillet over high heat until hot.
- Add steak and cook 10 minutes or until browned and internal temperature reaches 145°F for medium doneness, turning once halfway through cooking; top steak with Bourbon-Chipotle Butter during last 2 minutes of cooking. Let stand 5 minutes before serving; garnish with oregano sprigs, if desired.
Bourbon-Chipotle Butter
In medium bowl, stir together all ingredients. Cover and refrigerate up to 5 days. Makes about 1 cup. Serve leftover butter over sautéed vegetables, stir into scrambled eggs or mashed potatoes, or use in a Southwest-inspired shrimp scampi.
- 1/2 cup Schnucks unsalted butter, softened
- 3 tbsp. bourbon whiskey
- 2 tbsp. chopped chipotle chile peppers in adobo sauce
- 2 tbsp. fresh chives, chopped
- 1 tsp. fresh lemon juice
- 1 garlic clove, crushed with press
- 1/2 tsp. salt

If using a thinner steak, reduce heat to medium to finish cooking the steak once the outside has browned.
