Pork Florentine Skillet
Served with a side of wild rice, this one-pot dinner offers a balanced, healthy dinner ready in just 20 minutes!

Ingredients
- 4 (4-5 oz.) pork chops
- 1 tbsp. olive oil, divided
- 1 tbsp. unsalted butter
- 1/4 onion, finely chopped
- 1 garlic clove, minced
- 8 oz. sliced mushrooms
- 8 oz. spinach, chopped fresh or thawed frozen
- 2 tbsp. flour
- 1 cup skim milk
- 1 1/2 cups low-sodium vegetable stock
- 1 tsp. Schnucks Dijon mustard
- 1 tbsp. chopped fresh parsley, plus more to serve (if desired)
- 1 1/2 cups prepared wild rice
- paprika, to serve (if desired)
Instructions
- In a large skillet over medium-high heat add 1/2 teaspoon oil and sear the pork chops for 2–3 minutes per side or until browned. Remove from pan and set aside.
- Add remaining oil and butter to pan. Add onion, garlic, mushrooms and spinach; sauté 5–6 minutes or until softened. Add flour and stir to coat vegetables. Stir in milk, stock, mustard and parsley. Place pork chops back in the pan. Bring sauce to a boil then reduce heat and simmer, stirring occasionally, 8–10 minutes or until pork is cooked through.
- Serve over wild rice. Top with chopped parsley and paprika if desired.
