Mini Shrimp Po'Boy
These Mini Shrimp Po’Boys might be a simplified version of the original, but they pack major flavor that’s sure to satisfy.

Ingredients
- 1 lb. Schnucks frozen breaded popcorn shrimp
- 2 tsp. Cajun seasoning
- 1/2 cup light mayonnaise
- 1 tbsp. dill relish
- 1 1/2 tsp. lemon juice
- 1 tsp. capers, drained and chopped
- 1/2 tsp. Dijon mustard
- 1 cup shredded iceberg lettuce, divided
- 4 slices Nature’s Own honey wheat bread
- 1/4 cup sliced green onion, for garnish
Instructions
- Preheat oven to 425 degrees with a rack in middle position. Line a rimmed sheet pan with foil and coat with cooking spray. Spread shrimp in a single layer and sprinkle with Cajun seasoning.
- Bake, turning over halfway through, until golden brown, 10–12 minutes.
- In a small bowl, whisk together mayonnaise, relish, lemon juice, capers and Dijon. Divide lettuce among bread slices, top with shrimp and side of mayonnaise mixture (drizzle on top when ready to eat). Add to lunch box with green onion, for garnish.
