Melon & Avocado Bites


  • 1/4 cup part-skim ricotta cheese
  • 1 tbsp. chopped fresh thyme, plus more to serve
  • 1 tsp. lemon zest
  • 1/2 medium avocado
  • 8 (4x2-inch) local cantaloupe, honeydew and/or local watermelon wedges
  • 2 oz. thinly sliced prosciutto or ham, cut into 12 strips


  1. Combine ricotta, thyme and lemon zest in a small bowl. Cut avocado into four wedges.
  2. Arrange avocado and fruit on a work surface. Spread about 1 teaspoon of the cheese mixture on each wedge and wrap each with a strip of prosciutto or ham.
  3. Serve topped with more thyme, if desired.
