Melon & Avocado Bites
The rich creaminess of avocado pairs well with the refreshing sweetness of melon.

Ingredients
- 1/4 cup part-skim ricotta cheese
- 1 tbsp. chopped fresh thyme, plus more to serve
- 1 tsp. lemon zest
- 1/2 medium avocado
- 8 (4x2-inch) local cantaloupe, honeydew and/or local watermelon wedges
- 2 oz. thinly sliced prosciutto or ham, cut into 12 strips
Instructions
- Combine ricotta, thyme and lemon zest in a small bowl. Cut avocado into four wedges.
- Arrange avocado and fruit on a work surface. Spread about 1 teaspoon of the cheese mixture on each wedge and wrap each with a strip of prosciutto or ham.
- Serve topped with more thyme, if desired.
