Mediterranean Salmon Salad

Ingredients

  • 3 tbsp. Schnucks olive oil, divided
  • 4 (4 oz.) salmon fillets
  • 2 tbsp. Schnucks lemon juice
  • 1 tbsp. chopped fresh parsley
  • 1 tsp. Schnucks minced garlic
  • 1 tsp. Kosher salt
  • 1/2 tsp. Schnucks black pepper
  • 1/2 tsp. dried oregano
  • 4 cups roughly chopped romaine lettuce
  • 1 small cucumber, thinly sliced
  • 2 avocados, sliced
  • 1 cup grape tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup crumbled feta cheese

Instructions

  1. In a large skillet, heat 1 tbsp. oil over medium-high. Cook salmon 4 minutes; reduce heat to medium, turn fillets over and cook to desired doneness, 4–5 minutes more.
  2. In a blender, add remaining oil, the lemon juice, parsley, garlic, salt, pepper and oregano. Blend until well combined.
  3. Divide remaining ingredients among four bowls, top with salmon and drizzle with dressing. Serve immediately.
