Honey Sriracha Glazed Meatballs

Ingredients
- 2 1/2 cups unsalted chicken stock
- 1 cup brown rice
- 1 tbsp. minced yellow onion
- 12 frozen turkey meatballs
- 1 tbsp. Schnucks less-sodium soy sauce
- 2 tbsp. sriracha sauce
- 1 lime, juiced (about 2tbsp.)
- 1 tbsp. Schnucks honey
- 1 tsp. ground ginger
- 3 garlic cloves, minced
- 1/2 tsp. sesame oil
- 1 tsp. Schnucks cornstarch
- 1 (10 oz.) bag freshly frozen broccoli florets, steamed
- 2 green onions, sliced, for garnish
Instructions
- In a medium pot, bring stock, rice and onion to a boil over medium-high heat. Cover, reduce heat and simmer until liquid is absorbed, 40–45 minutes. Remove from heat and let stand 10 minutes.
- Meanwhile, preheat oven to 350 degrees. Spread meatballs on a foil-lined sheet pan; bake 20 minutes (or per package instructions).
- In a large skillet over medium heat, stir together soy sauce, sriracha, lime juice, honey, ginger, garlic and sesame oil until combined; cook until bubbling, 5–6 minutes. In a bowl, stir together cornstarch and 2 tablespoons of cold water, then stir into skillet. Reduce heat to low; simmer, stirring occasionally, until thickened, 2–3 minutes. Add meatballs and toss to coat. Prepare broccoli according to instructions.
- Serve over rice, garnished with green onion.
