Grilled Chicken Delight with Easy Salad

Grilled Chicken Delight with Easy Salad

Ingredients

  • 2 lb. bone-in, skin-on chicken drums and thighs
  • 1/2 cup Schnucks Dijon mustard
  • 1/4 cup Schnucks apple cider vinegar
  • 1/4 cup Schnucks canola oil
  • 3 tbsp. Schnucks honey
  • 2 tbsp. minced garlic
  • 2 tbsp. Schnucks salt-free original seasoning
  • 1 tbsp. Schnucks dried parsley flakes
  • 1.5 lbs. tri-color potatoes, boiled and halved
  • 2 cups arugula
  • 1/2 lemon

Instructions

  1. Preheat an outdoor grill to medium. In a gallon zip-top plastic bag, add chicken.
  2. In a medium bowl, whisk together mustard, vinegar, oil, honey, garlic and seasoning blend. Add half the mixture to bag with chicken and add parsley; seal and turn to coat. Refrigerate at least 30 minutes or, for more flavor, up 2 hours.
  3. Discarding marinade, arrange chicken skin side down and potatoes cut side down on grill rack. Grill until chicken’s internal temperature reaches 165 degrees, 6–8 minutes per side. Remove from heat. Continue grilling potatoes until charred, 10–15 minutes more. Remove from heat.
  4. In a large bowl, add grilled potatoes, arugula and remaining half marinade mixture. Squeeze lemon on top and toss to combine. Serve salad with grilled chicken.

Chef Tip: Not sure how to boil the potatoes for this recipe? Cover them with 1 inch of water and boil for 10 minutes, or until fork-tender. They can be prepared a day ahead if needed.
