Egg Bites Made with Lactose Free Cottage Cheese

Ingredients
- 1 cup Prairie Farms Lactose Free Cottage Cheese
- 8 large Schnucks eggs
- 1/2 cup Schnucks sharp cheddar cheese shredded optional *
- 1 tsp. Kosher salt
- 3/4 tsp. freshly ground black pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/2 tsp. smoked paprika
- 1/2 cup diced tomatoes, optional
- fresh cilantro, optional
Instructions
- Preheat oven to 350 degrees.
- Prepare muffin tin by coating with cooking spray. Set aside.
- In a blender or food processor, add eggs, lactose free cottage cheese, shredded cheddar cheese (optional- skip for lactose free version),salt, pepper, onion powder, garlic powder, and paprika. Blend until smooth.
- Divide batter between the cups in a muffin tin. Add the toppings of your choice. We chose chopped tomatoes and cilantro, but you can choose any toppings preferred.
- Bake for 20-25 minutes, until slightly firm to the touch. They will be puffed up, but will deflate a they cool. Let cool for five minutes before removing from muffin tin.
- Enjoy immediately or store in an airtight container for up to five days to reheat for breakfast or a snack later.
- Store in an airtight container in the freezer for up to three months. Take out and reheat in microwave when ready to eat.

*For Lactose Free Version - Use Prairie Farms Dairy Lactose Free Cottage Cheese and eliminate shredded cheese. For traditional option, substitute small curd or low-fat cottage cheese and shredded cheddar cheese.
