Dark-Chocolate and Beet Brownies

Ingredients
- 1/2 cup Schnucks unsweetened applesauce
- 1/2 cup pureed roasted, peeled red beets
- 3/4 cup Schnucks light brown sugar
- 1/2 cup Schnucks whole milk
- 1 Schnucks egg
- 1/2 cup Schnucks vegetable oil
- 1 1/2 cup oat flour or whole wheat flour
- 1/3 cup unsweetened cocoa powder
- 2 tsp. Schnucks baking powder
- 1/4 tsp. salt
- 2 tsp. pure vanilla extract
- 1/3 cup Schnucks semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees with a rack in middle position. Line a 9x9-inch baking pan with parchment paper and coat with cooking spray.
- In a blender or food processor, purée applesauce, beet, brown sugar, milk, egg and oil until smooth, 2–3 minutes. Scrape down sides with a spatula.
- Add flour, cocoa powder, baking powder, salt and vanilla. Blend until smooth, 1–2 minutes. Pour batter into prepared pan, level with spatula and sprinkle with chocolate chips.
- Bake until set and a toothpick comes out clean, 30–35 minutes. Remove from oven and let cool completely before slicing. Leftovers, refrigerated in an airtight container, keep up to 4 days.
