Crispy Fall Fritters
These versatile and quick-to-make fritters are a great way to use seasonal vegetables. They deliver a delicious crunch on the outside and a tender center.

Ingredients
- 1 lb. butternut squash, peeled and grated (about 4 cups)
- 4 large Schnucks eggs
- 1/2 cup Schnucks flour
- 1/2 cup Schnucks shredded or grated Parmesan cheese, plus more for garnish
- 1/2 cup thinly sliced green onion, plus more for garnish
- 1 tsp. Schnucks garlic powder
- 1/2 tsp. salt
- 4 tbsp. Schnucks olive oil, divided
Instructions
- In a large bowl, stir together all ingredients except oil until well combined.
- Shape squash mixture into 8 (1/2-inch-thick) patties, about 1/4 cup each. In a large skillet, working in batches as needed, heat oil and cook patties until golden brown, 3–4 minutes per side. Garnish with cheese and green onions, if desired. Serve immediately.
Chef tip: Mix it up with sweet potato, pumpkin or a combo instead of the butternut squash.
