Creamed Corn Salad


  • 1 cup heavy cream
  • 8 ears fresh corn
  • 1 lime, zest and juice
  • 1/2 cup chopped fresh cilantro
  • 1 tsp. paprika


  1. Beat heavy cream until stiff peaks form.
  2. Remove kernels from corn (cooked or raw) and add to a medium bowl along with zest and juice of one lime, cilantro and paprika. Gently fold in the whipped cream. Season with salt and pepper, if desired.
  3. Serve warm or cold.
