Cottage Cheese Cookie Dough Balls

Ingredients
- 24 oz. Schnucks low fat cottage cheese
- 2 tbsp. Culinaria pure maple syrup
- 1 1/2 tsp. Schnucks vanilla extract
- 1/2 tsp. salt
- 3 tbsp. vanilla protein powder
- 2 1/4 cups almond flour
- 1/2 cup semisweet mini chocolate chip
Instructions
- In a blender, add cottage cheese, maple syrup, vanilla, salt and protein powder. Blend until smooth and creamy, 2–5 minutes.
- In a medium bowl, stir together almond flour and chocolate chips until combined, 1 minute. Stir in cottage cheese mixture until thoroughly combined, 2–3 minutes. Cover with plastic wrap and refrigerate 1 hour.
- Using a 1-oz. cookie scoop (about 2 tablespoons), roll dough into 24 balls. Serve chilled. Cookie dough balls keep up to 4 days refrigerated in an airtight container, or up to 6 months frozen.
Cooking Tip
Any chocolate chips will work in this recipe, but use mini chocolate chips to ensure you get a little chocolate in each bite.
