Buffalo Pork Bites

  • 4 center-cut (New York) Pork Chops, about 1-inch thick
  • 1/2 cup olive oil
  • 1 tbsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. Cajun seasoning
  • 1 tbsp. black pepper
  • 1/2 cup unsalted butter
  • 1 1/2 garlic cloves (minced) or 1 tbsp. of garlic paste
  • 2/3 cup hot sauce
  • 1 tbsp. Worcestershire sauce
  • 1/2 tbsp. white vinegar
  • 1/2 tsp. kosher salt
  • Dash cayenne pepper
  • blue cheese dressing, optional
  • Ranch dressing, optional
  • fresh veggies, optional

  1. Cut pork chops into equally sized cubes and place in a large bowl. Coat pieces evenly with olive oil.
  2. In a small bowl, whisk together the garlic powder, onion powder, Cajun seasoning and black pepper.
  3. Sprinkle spice mixture onto the chops and toss until evenly coated.
  4. Arrange the chops in the air fryer basket and cook on 390 degrees F for 6 minutes. Open the air fryer and turn each piece. Cook for an additional 3–4 minutes to an internal temperature of 145–160 degrees F. Remove from heat and allow a 3-minute rest. Set aside.
  5. In a small saucepan over medium heat, melt the butter. Add in the garlic and sauté for about 25 seconds until soft and fragrant.
  6. Whisk in the hot sauce, Worcestershire sauce, vinegar, salt and cayenne pepper. Bring to a boil and turn down to a simmer. Simmer for 5 minutes, stirring occasionally. The sauce will separate while cooking.
  7. Remove from heat and continue to whisk completely together. Add pork chops and coat generously with the sauce.
  8. Serve immediately. Serving ideas include blue cheese dressing, Ranch dressing and fresh veggies like carrots, celery sticks and cherry tomatoes.
