This Brie & Apple Turkey Sandwich is the perfect balance of creamy Brie, crisp apple slices and savory turkey. You can enjoy this little slice of heaven in under 10 minutes.

Brie & Apple Turkey Sandwiches


  • 1/4 cup mayonnaise
  • 1 tbsp. Dijon mustard
  • 8 slices sourdough bread
  • 4 oz. brie cheese, sliced & divided
  • 1 gala apple, thinly sliced
  • 8 oz. low sodium thinly sliced turkey, divided
  • 1/2 cup packed baby spring mix, divided (optional)


  1. Move oven rack to top-third position. Preheat oven to broil on high.
  2. In a small bowl, stir together mayonnaise and mustard with a fork until combined, about 1 minute.
  3. On a sheet pan, arrange bread slices with brie cheese on top. Toast in oven until melted and lightly golden, 1–2 minutes. Remove from oven.
  4. Divide apple slices evenly between four bread slices. Top each slice with 2 ounces of turkey. Spread about 1 tablespoon of mayo sauce and top with some salad greens (if desired).
  5. Add remaining toasted slices of bread to tops of sandwiches, cheese-side down. Cut each sandwich in half and serve immediately.
