Blueberry Goat Cheese

Ingredients

  • 1 cup fresh or frozen blueberries
  • 2 tbsp. Schnucks honey
  • 1 tsp. lemon zest
  • 1 tbsp. lemon juice
  • 1/4 tsp. salt
  • 1 tsp. chopped fresh thyme
  • 8 oz. goat cheese log

Instructions

  1. In a saucepan over medium heat, add blueberries, honey, lemon zest, lemon juice, and salt.
  2. Cook, stirring constantly, until blueberries burst and thick syrup coats the back of a spoon, about 15 minutes.
  3. Remove from heat and stir in chopped fresh thyme.
  4. Once cooled, spoon blueberry jam onto a large sheet of doubled plastic wrap and top with goat cheese log.
  5. Roll up tightly, spreading blueberries evenly to fully cover log.
  6. Refrigerate at least 1 hour or until ready to serve.
