Ingredients
- 1 cup fresh or frozen blueberries
- 2 tbsp. Schnucks honey
- 1 tsp. lemon zest
- 1 tbsp. lemon juice
- 1/4 tsp. salt
- 1 tsp. chopped fresh thyme
- 8 oz. goat cheese log
Instructions
- In a saucepan over medium heat, add blueberries, honey, lemon zest, lemon juice, and salt.
- Cook, stirring constantly, until blueberries burst and thick syrup coats the back of a spoon, about 15 minutes.
- Remove from heat and stir in chopped fresh thyme.
- Once cooled, spoon blueberry jam onto a large sheet of doubled plastic wrap and top with goat cheese log.
- Roll up tightly, spreading blueberries evenly to fully cover log.
- Refrigerate at least 1 hour or until ready to serve.
