Avocado Deviled Eggs

These Avocado Deviled Eggs are a modern take on a classic. The smooth and velvety avocado filling adds a rich and refreshing twist to the traditional deviled eggs.

Avocado Deviled Eggs

Ingredients

  • 6 Schnucks eggs
  • 1/4 cup Schnucks white vinegar

Filling

  • 1/2 avocado
  • 1 tsp. Schnucks sweet pickle relish
  • 1/2 tsp. Schnucks yellow mustard
  • 1/8 tsp. Schnucks garlic powder
  • 1/8 tsp. Schnucks onion powder
  • 1/8 tsp. salt
  • 1/8 tsp. Schnucks black pepper
  • 6 cherry tomatoes, halved
  • 2 tbsp. chopped fresh cilantro

Instructions

  1. In a medium pot, cover eggs with water and add vinegar. Bring to a boil over medium-high heat.
  2. Remove from heat, cover and let stand 12 minutes. Transfer eggs to an ice bath and let cool completely. Peel and halve eggs. Transfer yolks to a medium bowl and thoroughly mash with a fork.
  3. In a medium bowl with mashed yolks, add avocado, relish, mustard, garlic and onion powders, salt and black pepper. Stir until thoroughly combined, then pipe or spoon into egg halves.
  4. Top eggs with halved cherry tomatoes and cilantro
