Avocado Black Cherry Chocolate Chip Mini Muffins

Ingredients

  • 2 (6.5 oz.) pkgs. chocolate chip muffin mix
  • 1 ripe avocado, peeled & seeded
  • 1/2 cup Schnucks frozen dark sweet cherries, thawed & chopped
  • 1 cup water

Instructions

  1. Preheat oven to 400 degrees. In a large bowl, add avocado and mash thoroughly. Add 1 cup water and dry contents of package and stir to mix until just combined. Pat cherries dry with paper towels and stir into batter.
  2. Line mini muffin tins with 28 cupcake liners or nonstick cooking spray. Scoop batter into tins until 3/4 full.
  3. Bake for 15 minutes or until cooked through (clean toothpick). Remove from oven and rest 10 minutes. Remove from tins and serve warm.
