Ingredients
- 2 (6.5 oz.) pkgs. chocolate chip muffin mix
- 1 ripe avocado, peeled & seeded
- 1/2 cup Schnucks frozen dark sweet cherries, thawed & chopped
- 1 cup water
Instructions
- Preheat oven to 400 degrees. In a large bowl, add avocado and mash thoroughly. Add 1 cup water and dry contents of package and stir to mix until just combined. Pat cherries dry with paper towels and stir into batter.
- Line mini muffin tins with 28 cupcake liners or nonstick cooking spray. Scoop batter into tins until 3/4 full.
- Bake for 15 minutes or until cooked through (clean toothpick). Remove from oven and rest 10 minutes. Remove from tins and serve warm.
