Asparagus and Pea Salad

Upgrade your usual green salad to this Asparagus and Pea Salad! Between the veggies, almonds, mint, garlic and parsley, it offers excellent crunch and zesty, herby flavor.

Asparagus and Pea Salad

Ingredients

  • 1 lb. fresh asparagus, ends trimmed
  • 2 cups Schnucks freshly frozen peas, thawed
  • 1 (5 oz.) pkg. baby arugula
  • 4 radishes, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/3 cup sliced almonds
  • 1 tbsp. chopped fresh mint

Dressing

  • 1/3 cup Schnucks olive oil
  • 1 tbsp. Schnucks honey
  • 1 lemon, juiced
  • 1 tbsp. fresh parsley, chopped
  • 1 garlic clove

Instructions

  1. Fill a medium pot halfway with water and heat over high. In a blender or food processor, blend together all dressing ingredients. Season with salt and pepper, if desired.
  2. When water is boiling, add asparagus and peas; cook until crisp-tender, 3–4 minutes. Drain and rinse vegetables with cold water until cool.
  3. In a large serving bowl, toss together asparagus and peas with remaining salad ingredients. Drizzle with dressing and serve immediately.
