Spicy Tuna Cucumber Bites

Ingredients

  • 1 large English cucumber, cut into 16 slices
  • 1 (12 oz.) can chunk light tuna in water, drained
  • 3 tbsp. Schnucks nonfat plain Greek yogurt
  • 2 tbsp. chopped green onion
  • 1 tbsp. sriracha sauce, plus more for garnish
  • 1/2 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 2 tbsp. chopped fresh chives (optional)

Instructions

  1. In a medium bowl, add tuna, yogurt, green onion, sriracha, garlic powder and smoked paprika. Stir to combine, breaking up tuna chunks into smaller pieces. Season with salt and pepper, if desired.
  2. Arrange cucumber slices on a platter; spoon 1 tablespoon tuna mixture onto each. Garnish with chives (if using) and a drizzle of sriracha. Serve chilled.
